I never thought I would be craving a chickpea salad sandwich but here we are! One of the first things I missed going vegan was a really good sandwich. Tuna salad sandwiches were my favorite and this is vegan chickpea sandwich recipe is a very good swap! Plus, it is healthier in every way! I don’t feel guilty about going back for more of these. I have packed these chickpea sandwiches up for road trips & picnics too! They are simple and delicious!
Ingredients
1 can chickpeas
1/2 cup vegan mayo
1/3 cup diced red onion
1 stick celery diced
1/2 cup diced carrot
2tbl brown mustard
1tbl apple cider vinegar
2tbl tahini
relish – optional
salt
pepper
paprika
sandwich toppings of choice
Mash Chickpeas with the back of a fork or a potato masher. Mix all ingredients together in a large bowl. Season to taste and top with sandwich toppings ( lettuce tomato, sprouts). Enjoy!
